Lazy-Day Lasagna Soup

Ingredients

  • 1 pound ground beef or turkey
  • 1 (24-ounce) jar marinara sauce
  • 1 (32-ounce) container chicken stock
  • 1/2 teaspoon dried oregano or Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded, for garnish
  • fresh basil leaves, to taste, for garnish

Directions

Step 1 –In a large skillet over medium-high heat, add the ground beef and cook, while crumbling, until the beef is no longer pink, about 5-7 minutes.

Step 2 –In a slow cooker on the low heat setting, add the cooked ground beef, the marinara sauce, the chicken stock, the oregano, the salt, and the black pepper and stir to combine.

Step 3 –Cover and cook on low, while stirring occasionally, until the flavors meld together, about 4-6 hours.

Step 4 –In about the last 30 minutes of the cooking time, add the broken lasagna noodles and the ricotta cheese and stir to combine.

Step 5 –Cover and cook until the lasagna noodles are tender, about 30 minutes.

Step 6 –Serve garnished with the mozzarella cheese and the fresh basil.
