Ingredients

  • 4 large eggs
  • 1/4 cup half-and-half or milk
  • 1/2 teaspoon kosher salt
  • 1/4 cup cilantro, finely chopped
  • 1 cup Mexican-blend cheese, shredded
  • 1 cup goat cheese, crumbled
  • 2 cups kale, thinly sliced
  • 1 1/2 cups tomatoes, chopped
  • 1/2 cup corn, drained
  • 4 cups tortilla chips

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –In a large bowl, add the eggs, the half-and-half, and the salt and whisk until well-combined.

Step 3 –Add the cilantro, the Mexican-blend cheese, and the goat cheese to the egg mixture and stir to combine.

Step 4 –Add the kale, the tomatoes, the corn, and the tortilla chips to the cheese mixture and toss to coat.

Step 5 –Evenly add the tortilla mixture to a 2 1/2-quart baking dish, cover, and bake until the egg sets and the cheese is melted, about 30-35 minutes, uncovering for the last 5 minutes of baking to allow the top to brown.

Step 6 –Serve.
