Ingredients
- 8 cups baby arugula
- 2 tablespoons extra-virgin olive oil
- 1 1/2 tablespoons fresh lemon juice plus the zest of 1/2 lemon
- 1/4 teaspoon kosher salt, plus more, to taste
- 3/4 cup parmesan cheese shavings
- 1 small shallot, thinly sliced
Directions
Step 1 –In a large bowl, place the baby arugula, the olive oil, the lemon juice, the lemon zest, and 1/4 teaspoon of the kosher salt and toss to thoroughly combine.
Step 2 –Add the parmesan shavings and the sliced shallot and toss until combined.
Step 3 –Taste for seasoning and add additional salt as needed.
