  • 8 cups baby arugula
  • 2 tablespoons extra-virgin olive oil
  • 1 1/2 tablespoons fresh lemon juice plus the zest of 1/2 lemon
  • 1/4 teaspoon kosher salt, plus more, to taste
  • 3/4 cup parmesan cheese shavings
  • 1 small shallot, thinly sliced
