Michelle Obama’s Bean Salad

If there’s one thing we know about the 44th First Lady, it’s that she loves fresh ingredients. Inspired by that and her love for healthy eating, we present Michelle Obama’s Bean Salad! Packed with hearty white beans, crispy snow peas, and ravishing radishes, you can feel good about each nourishing bite. Tossed with a sweet and citrusy dressing, Michelle Obama’s Bean Salad will have you chanting, “yes, we can… enjoy healthy foods!”

Ingredients

  • 1/4 cup extra-virgin olive oil
  • 1/2 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1/2 teaspoon honey
  • 1 tablespoon shallot, chopped
  • 1 (15-ounce) can white beans, drained and rinsed
  • 1 cup snow peas or sugar snap peas
  • 1/2 bunch fresh chives, chopped
  • 5 mild radishes, thinly sliced
  • 3 tablespoons fresh basil, chopped

Directions

Step 1 –In a large bowl, add the olive oil, the lemon zest, the lemon juice, the honey, and the shallot and whisk to combine.

Step 2 –Add the white beans to the dressing mixture and toss well.

Step 3 –In a small pot of boiling water, cook the snow peas for 1 minute.

Step 4 –Use a slotted spoon to transfer the peas to a bowl of ice water to stop the cooking process and to cool, about 1 minute.

Step 5 –Transfer the peas from the ice water, pat them dry, and then thinly slice them.

Step 6 –In a large salad bowl, add the white bean mixture, the cooked snow peas, the chives, the radishes, and the basil and lightly toss to coat.

Step 7 –Serve.
