No-Fuss Pork Chops

Ingredients

  • 1/2 cup pineapple juice
  • 2 tablespoons brown sugar
  • 2 tablespoons cider vinegar
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil, divided
  • 4 (5-ounce) pork loin chops, boneless
  • 2 medium onions, chopped
  • noodles, cooked and hot, optional
  • green onions, sliced, optional

Directions

Step 1 –In a medium bowl, mix the pineapple juice, brown sugar, cider vinegar, and salt.

Step 2 –In a large skillet, heat 1 tablespoon olive oil over medium heat.

Step 3 –Once the oil is hot, add the pork chops and cook until evenly browned, about 3-5 minutes on each side.

Step 4 –Transfer the pork from the skillet.

Step 5 –Add the remaining olive oil to the skillet.

Step 6 –Once hot, add the onions and sauté until tender, about 4-5 minutes.

Step 7 –Add the juice mixture to the skillet and bring it to a boil.

Step 8 –Reduce the heat to low and simmer, covered, for 10 minutes.

Step 9 –Add the pork back to the skillet.

Step 10 –Cover and braise until a meat thermometer inserted into the pork reads 145 degrees F, about 2-3 minutes.

Step 11 –Let the pork stand, covered, for 5 minutes.

Step 12 –Serve over noodles and topped with green onions.
