Ingredients

  • 6 slices bacon
  • 2 medium yellow onions, thinly sliced
  • 1/2 teaspoon kosher salt
  • 1 clove garlic, minced
  • 1 tablespoon balsamic vinegar
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon smoked paprika
  • 2 tablespoons chives, finely chopped, plus more, to taste, for garnish

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Line a baking sheet with aluminum foil.

Step 3 –Place the bacon slices on the prepared baking sheet and bake until they are crisp and brown, about 30 minutes.

Step 4 –Place the cooked bacon on a paper-towel-lined plate to drain and cool.

Step 5 –Carefully lift the aluminum foil from the baking sheet and pour the bacon fat into a large skillet.

Step 6 –Place the skillet (with the bacon fat) over medium heat.

Step 7 –Add the onions and the salt to the bacon fat and stir constantly for 5 minutes.

Step 8 –Reduce the heat to medium-low and cook the onions, stirring frequently, until they are caramelized, about 25-30 minutes.

Step 9 –Add the garlic to the onions and cook for 1 minute.

Step 10 –Transfer the skillet from heat and add the balsamic vinegar to the onion mixture.

Step 11 –In a mixing bowl, add the sour cream, the mayonnaise, the pepper, the smoked paprika, and 2 tablespoons of the chives.

Step 12 –Chop 4 of the bacon strips, reserving the rest for garnish.

Step 13 –Add the 4 chopped bacon and the caramelized onions to the dip mixture and stir to combine.

Step 14 –Transfer the dip into a serving bowl.

Step 15 –Serve the dip garnished with the extra chives and the remaining bacon strips.
