Oia Ring

Oia is a small village in Greece renowned throughout the world for its breathtaking visuals. The Oia Ring is a similarly breathtaking explosion of flavor wrapped in a flaky, buttery crescent roll. Good times! Each roll is stuffed with classic Greek flavors like tangy olives, melty feta cheese, and herbaceous dill, and then baked to golden-brown goodness like the sunset over the Grecian islands. The Oia Ring has beauty and taste, and your tastebuds will be dreaming of turquoise waters for a long time afterward!

Ingredients

  • 1 (10-ounce) package frozen chopped spinach, thawed and water squeezed out
  • 1 (12-ounce) jar marinated artichoke hearts, chopped
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup garlic and herb flavored feta cheese
  • 1/2 cup red bell pepper, diced and roasted
  • 1/4 cup Kalamata olives, finely chopped
  • 2 tablespoons pine nuts, lightly toasted
  • 1/4 teaspoon fresh cracked pepper
  • 1/2 cup mayonnaise
  • 1 clove garlic, minced
  • 2 teaspoons dill, freshly chopped
  • 2 (8-ounce) packages crescent roll dough
  • 1 egg white, lightly beaten
  • 2 tablespoons parmesan cheese, freshly grated

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –In a bowl, use a fork to toss together the spinach, the artichoke hearts, the mozzarella, the feta, the roasted red pepper, the olives, the pine nuts, the pepper, the mayonnaise, the garlic, and the dill.

Step 3 –On a large baking sheet sprayed lightly with cooking spray, arrange the crescent dough, separating the dough into triangles along the perforations; lay the dough triangles out, overlapping at the corners, so that the short ends of the triangles form a circle.

Step 4 –Spoon the spinach filling around the circle formed by the overlapping dough triangles.

Step 5 –Gently fold the long end of each triangle over the filling to form a ring.

Step 6 –Brush the dough lightly with the egg white and sprinkle with the parmesan cheese.

Step 7 –Bake until the filling is heated through and the crescent dough is browned and toasty, about 20 minutes.

Step 8 –Serve.
