Ingredients

For the topping:

  • 4 slices thick and hearty bread, white or whole-wheat
  • 5 tablespoons butter, cold and cut into 1/2-inch pieces
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon ground cinnamon

For the peach filling:

  • 2 tablespoons butter
  • 3 1/2 pounds peaches, peeled and pitted, cut into 1/2-inch wedges
  • 1/3 cup granulated sugar
  • 1/3 cup light brown sugar, packed
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • vanilla ice cream, optional, to taste, for serving

Directions

Step 1 -Adjust the oven rack to the middle position.

Step 2 -Preheat the oven to 400 degrees F.

Step 3 -In a food processor, pulse the bread and 5 tablespoons of the cold butter until it is coarsely ground.

Step 4 -In a small bowl, combine 1 tablespoon of the granulated sugar with the cinnamon.

Step 5 -In a large nonstick, oven-safe skillet over medium heat, melt the remaining 2 tablespoons of the butter.

Step 6 -Add the peaches and cook until they are softened and begin to caramelize, about 8-12 minutes.

Step 7 -Transfer the skillet from the heat.

Step 8 -Stir in 1 cup of the bread-butter mixture, the remaining granulated sugar, the brown sugar, the lemon juice, the vanilla, and the salt.

Step 9 -Top the peach mixture with the remaining bread-butter mixture.

Step 10 -Sprinkle the bread-butter with the cinnamon-sugar.

Step 11 -Bake on the middle rack until the topping is golden-brown and the juices are bubbling, for about 20 minutes.

Step 12 -Allow the Peach Betty to cool for 20 minutes.

Step 13 -Serve with the vanilla ice cream.
