Ingredients

  • 3 tablespoons vegetable oil or neutral-flavored oil
  • 8 cloves garlic, very finely sliced, plus 2 1/2 teaspoons, minced
  • 4 tablespoons butter, divided
  • 1 1/2 cups white rice, medium or long-grain, uncooked
  • 2 1/2 cups chicken broth
  • 1/2 cup scallions, finely sliced
  • salt, to taste
  • white pepper, to taste

Directions

Step 1 –Heat the oil in a large saucepan over medium heat.

Step 2 –Add 8 cloves of the sliced garlic and sauté, moving the slices constantly, until they are golden and crisp, about 4-5 minutes.

Step 3 –Transfer the garlic slices to paper towels to drain.

Step 4 –Pour out the excess oil.

Step 5 –In the same saucepan, melt 2 tablespoons of the butter.

Step 6 –Add the remaining 2 1/2 teaspoons of the minced garlic and sauté until the garlic is light golden and the butter is infused with garlic flavor, about 1 minute 30 seconds.

Step 7 –Add the rice to the garlic-butter mixture, stirring to coat.

Step 8 –Add the broth to the saucepan and place the lid on.

Step 9 –Bring the rice mixture to a boil, then immediately turn the heat to medium-low.

Step 10 –Cook until all of the liquid is absorbed into the rice, about 12-15 minutes.

Step 11 –Transfer the saucepan from the stovetop, while leaving the lid on.

Step 12 –Let the rice rest for 10 minutes.

Step 13 –Fluff the rice with a fork.

Step 14 –Stir in the remaining 2 tablespoons of the butter and the scallions.

Step 15 –Transfer the rice to four serving bowls.

Step 16 –Sprinkle the rice with the sautéed garlic slices, the salt, and the white pepper.

Step 17 –Serve immediately.
