Ingredients
- 1/3 cup soy sauce
- 1/3 cup granulated sugar
- 10 cloves garlic, finely minced
- 1 tablespoon fresh ginger, finely minced
- 3 pounds chicken thighs, bone-in and skin-on
- 1/2 cup canola oil
- 1/2 cup all-purpose flour
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper

Directions
Step 1 –In a large shallow dish, add the soy sauce, the sugar, the garlic, and the ginger and stir until the sugar dissolves.
Step 2 –Add the chicken thighs to the marinade and refrigerate, flipping them halfway through, for at least 4 hours and up to overnight.
Step 3 –Add the oil to a 9×13-inch baking dish and place it in a cold oven, then preheat the oven to 375 degrees F.
Step 4 –Add the flour, the salt, and the pepper to a medium bowl and mix to combine.
Step 5 –Transfer the chicken thighs from the marinade and pat them dry.
Step 6 –Add the chicken thighs to the flour mixture and coat well, gently shaking off any excess. Transfer them to a clean plate.
Step 7 –Carefully transfer the hot baking dish from the oven and lay the coated chicken thighs, skin-side up, in the bottom of the dish.
Step 8 –Return the dish to the oven and bake until the chicken thighs reach an internal temperature of 185 degrees F in the thickest part and are golden-brown, about 40-50 minutes.
Step 9 –Let the chicken thighs cool, about 5-10 minutes.
Step 10 –Serve.
