When he wasn’t busy being a musical icon, superstar Prince apparently loved serving friends and guests pancakes; much like his music, they were reportedly perfect. Prince-Inspired Pancakes try to capture the magic of being served breakfast by such a visionary; these pancakes are ethereally light and fluffy, beautifully golden-brown, and sweet. You don’t have to be rich or cool to rule the morning. You just need Prince-Inspired Pancakes. Chef’s kiss!
Ingredients
- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1/4 teaspoon salt, or more to taste
- 1 tablespoon white sugar
- 1 1/4 cups milk
- 1 egg
- 3 tablespoons butter, melted
- maple syrup, optional
- pancake syrup, optional
- blueberries, optional
Directions
Step 1 –In a large bowl, sift the flour, baking powder, salt, and sugar together.
Step 2 –In a small separate bowl, mix the milk, eggs, and melted butter, stirring to combine.
Step 3 –Make a well in the center of the flour mixture and pour the milk mixture into the well.
Step 4 –Slowly stir together until just combined. You want to go slow to ensure you don’t build up gluten in the batter, which causes tough pancakes. The batter should be incorporated but lumpy.
Step 5 –Optionally, before cooking, you can refrigerate the batter in an airtight container for 30 minutes. This will help ensure a lighter pancake.
Step 6 –Grease a griddle or frying pan and heat it over medium-high heat on the stove-top.
Step 7 –Pour or scoop the prepared batter onto the griddle or pan, using about 1/4 cup of batter for each pancake.
Step 8 –Cook each side until golden brown, and serve immediately with your favorite toppings.
