Raspberry Fool

There’s nothing foolish about falling in love with Raspberry Fool! This creamy, fluffy delight hails from England, and while the origins of the name aren’t completely clear, everyone can see how sweet and uplifting it tastes! The crushed raspberries add notes of freshness and tartness to balance out the whipped cream, and a few crunchy cookies on top add texture. So, Raspberry Fool covers all the bases for a quick, easy, and exceptional Valentine’s Day dessert! Sounds like a smart move to us!

Ingredients

  • 3 cups raspberries, plus more for serving
  • 1/4 cup sugar
  • 3 tablespoons raspberry liqueur or water
  • 2 cups heavy cream, cold
  • 1/2 cup powdered sugar
  • 8 whole vanilla wafers, crumbled
  • fresh mint sprigs, optional, to taste, for garnish

Directions

Step 1 –In a bowl, stir the raspberries, the sugar, and the liqueur together, then let the mixture sit for 10-15 minutes.

Step 2 –In another bowl, whip the heavy cream with the powdered sugar until soft peaks form.

Step 3 –Mash the raspberries with a fork until all the liquid and the fruit are combined.

Step 4 –Spoon 1/2 of the fruit mixture into the whipped cream, folding once or twice with a rubber spatula, being careful not to overmix.

Step 5 –Divide the fruit and cream mixture amongst 8 glasses and top with the remaining raspberry purée, sprinkle with the crushed cookies, and garnish with the mint.

Step 6 –Serve.
