These brownies capture one of the greatest ice cream flavors ever invented! Rocky Road Brownies are topped with melted, shiny chocolate, puffy pillowy marshmallows, and crunchy walnuts. With a foundation of fudgy brownie, these treats are truly incredible! They may be called Rocky Road Brownies but enjoying them is a smooth road!

Ingredients

  • 1/2 cup butter unsalted, cut into pieces
  • 12 ounces semisweet chocolate chips, divided
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1/2 teaspoon salt
  • 2 large eggs
  • 3/4 cup all-purpose flour, spooned and leveled
  • 1 cup mini marshmallows
  • 1/2 cup walnuts, chopped

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Line the bottom of an 8-inch square baking pan with parchment paper, leave an overhang on two sides so you can easily pull the brownies out.

Step 3 –Grease the baking pan well.

Step 4 –Set a heatproof bowl over a pan of water that is simmering,

Step 5 –Add in the butter and 1 cup of the chocolate chips, stirring occasionally until the chocolate is melted, about 3-5 minutes.

Step 6 –Move the chocolate mixture off of the heat, and stir in the granulated sugar, the brown sugar, and the salt.

Step 7 –Gradually add in the eggs, stirring constantly to prevent the eggs from scrambling.

Step 8 –Add the flour and mix until just combined but avoid overmixing.

Step 9 –Spread out the batter evenly into the prepared pan.

Step 10 –Bake until a toothpick inserted into the center comes out with only a few moist crumbs attached, about 25-35 minutes.

Step 11 –Move the brownies out of the oven, and sprinkle with the remaining chocolate chips, the marshmallows, and the walnuts.

Step 12 –Bake again until the chocolate is shiny and the marshmallows have puffed, about 5 minutes.

Step 13 –Let the brownies cool completely in the pan.

Step 14 –Lift the brownies from the pan onto a work surface, and cut them into 16 squares.

Step 15 –Serve.
