  • 1 1/2 pounds chicken breast, boneless and skinless
  • 1/2 cup barbecue sauce
  • 1 cup mayonnaise
  • 1/2 cup onion, finely chopped
  • 1/2 cup celery, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes
  • 8 tomato slices
  • 8 lettuce leaves
  • 8 kaiser rolls, split

Directions

Step 1 –Place the chicken breasts in a shallow baking dish.

Step 2 –Cover the baking dish and refrigerate overnight.

Step 3 –Preheat the grill to medium-high heat.

Step 4 –Add the barbecue sauce to the chicken breasts and turn to coat.

Step 5 –Grill the chicken breasts, covered, until they reach an internal temperature of 165 degrees F, about 6-8 minutes per side.

Step 6 –Let the chicken breasts rest at room temperature.

Step 7 –Place the chicken breasts in a large bowl, cover, and refrigerate until chilled.

Step 8 –Chop the chicken breasts and return to the bowl.

Step 9 –Stir the mayonnaise, the onion, the celery, the salt, and the red pepper flakes in with the chopped chicken.

Step 10 –Place the chicken salad, the tomato, and the lettuce on the rolls.

Step 11 –Serve.
