Sausage Hash Casserole

Ingredients

  • 1 (1-pound) package ground pork sausage with sage
  • 1 (1-pound) package hot ground pork sausage
  • 1 (30-ounce) package frozen shredded hash browns
  • 2 teaspoons kosher salt, divided
  • 1 teaspoon black pepper, divided
  • 6 ounces sharp cheddar cheese, shredded, divided
  • 6 large eggs, lightly beaten
  • 1 cup whole milk
  • 1 tablespoon fresh flat-leaf parsley, chopped

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Coat a 9×13-inch baking dish with cooking spray.

Step 3 –Cook the sage ground sausage and the hot ground sausage in a large skillet over medium-high heat, stirring often, until they are crumbled and browned, about 10 minutes.

Step 4 –Transfer the sausage to a paper-towel-lined plate to drain.

Step 5 –In batches, cook the hash browns in a large nonstick skillet according to the package directions, but without adding any salt (if the directions call for it).

Step 6 –Sprinkle the hash browns with 1 teaspoon of the salt and 1/2 teaspoon of the pepper.

Step 7 –Stir the sausage mixture, the hash browns, and 1 cup of the cheese into a bowl.

Step 8 –Spoon the sausage mixture into the prepared baking dish.

Step 9 –Whisk the eggs, the milk, the remaining salt, and the remaining pepper together in a bowl.

Step 10 –Pour the egg mixture over the sausage mixture and sprinkle it with the remaining cheese.

Step 11 –Bake until the eggs are set, about 30 minutes.

Step 12 –Sprinkle the casserole with the parsley and serve.
