Sesame Chicken & Noodles

When the question is “what’s for dinner,” this dish is an answer that always makes people cheer! Sesame Chicken & Noodles are simple, speedy, and just so scrumptious! The noodles are tender and infused with the buttery and nutty flavor of sesame. Mixed in are sweet, tangy, savory chicken strips with a touch of garlic and chili heat. Mmmm, in just 20 minutes, you’ll be eating Sesame Chicken & Noodles and living your best life!

Ingredients

  • 1/3 cup rice vinegar
  • 1/3 cup green onions, thinly sliced
  • 2 tablespoons honey
  • 1 tablespoon reduced-sodium soy sauce
  • 1 tablespoon fresh ginger, grated
  • 2 teaspoons garlic-chili sauce, store-bought or homemade
  • 12 ounces frozen grilled chicken breast strips, thawed and warmed through
  • 1 (12-ounce) package dried udon noodles or whole-wheat spaghetti
  • 3 tablespoons toasted sesame oil
  • 2 medium yellow, red, or orange sweet bell peppers, cut into bite-size strips
  • fresh cilantro, optional, to taste, chopped, for serving

Directions

Step 1 –In a medium bowl, stir the rice vinegar, the green onions, the honey, the soy sauce, the ginger, and the garlic-chili sauce together.

Step 2 –Add the warm chicken to the sauce mixture and stir to coat.

Step 3 –Set the chicken mixture aside so the flavors can meld.

Step 4 –In a large saucepan filled with boiling water, cook the noodles until just tender, about 8 minutes.

Step 5 –Drain the noodles and return them to the saucepan.

Step 6 –Drizzle the noodles with the sesame oil and toss to coat.

Step 7 –Add the chicken mixture to the sesame-noodles and toss to combine.

Step 8 –Transfer the chicken-noodle mixture to serving bowls.
