Ingredients

  • 2 tablespoons oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • coarse salt, to taste
  • pepper, to taste
  • 1 1/2 teaspoons dried thyme or oregano
  • 1 (28 ounce) can whole tomatoes
  • 1 (28 ounce) can crushed tomatoes
  • 2 pounds store-bought cheese ravioli
  • 1 1/2 cups mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated

Directions

Step 1 –Preheat the oven to 425 degrees F.

Step 2 –Heat the oil in a large saucepan over medium-high heat.

Step 3 –Add the onion and garlic, seasoning both with salt and pepper.

Step 4 –Cook until the onions are softened, about 5 minutes. Stir constantly to prevent the garlic from burning.

Step 5 –Add the thyme, whole tomatoes, and crushed tomatoes.

Step 6 –Bring the mixture to a boil.

Step 7 –Reduce the heat and allow the mixture to simmer, breaking up the tomatoes with a spoon.

Step 8 –Reduce the sauce to about 5 cups, about 20-25 minutes.

Step 9 –Cook the ravioli in a pot of boiling water just until they float. Drain the ravioli.

Step 10 –Toss the sauce and ravioli together in a casserole dish.

Step 11 –Top the ravioli with the mozzarella and parmesan cheese.

Step 12 –Bake for 20-25 minutes.

Step 13 –Serve hot!
