Ingredients

  • 2 tablespoons oil, neutral-flavored
  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 clove garlic, chopped
  • 1 (14.5-ounce) can petite diced tomatoes
  • 1 cup ketchup
  • 1 tablespoon brown sugar
  • 1 teaspoon yellow mustard
  • salt, to taste
  • ground black pepper to taste
  • 2 cups frozen whole-kernel corn
  • 1 (16-ounce) package penne pasta
  • 1 1/2 cups Colby-Jack cheese, shredded

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9×13-inch casserole dish.

Step 3 –Heat the oil in a large skillet over medium-high heat on the stovetop.

Step 4 –When the oil is shimmering, add the ground beef and sauté until golden brown.

Step 5 –Add the onion, green bell pepper, red bell pepper, and garlic.

Step 6 –Stir and cook the mixture until crumbly, about 5-7 minutes.
