Slow Gnocchi Soup

When the air is cold and your day is filled with the hustle and bustle of finding the perfect Christmas gifts, it’s just nice to come home to a warm bowl of something comforting. This Slow Gnocchi Soup basically cooks itself and is ready to refuel you after that long day on your feet. The creamy, savory soup is decked out with juicy chicken, nourishing spinach, and of course, plenty of soft gnocchi. Give yourself the perfect present — a bowl filled to the brim with Slow Gnocchi Soup—it’s just what you need!

Ingredients

  • 2 pounds chicken breasts, boneless and skinless
  • 1 cup yellow onion, diced
  • 1 cup celery, chopped
  • 3/4 cup carrots, shredded
  • 2 cloves garlic, minced
  • 1 teaspoon ground thyme
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 4 cups chicken broth
  • 1 (16-ounce) package potato gnocchi
  • 2 cups heavy cream
  • 1 tablespoon cornstarch
  • 1 cup spinach, chopped
  • 1 tablespoon fresh parsley, optional, finely chopped, for garnish

Directions

Step 1 –In the bowl of a slow cooker, add the chicken, the onion, the celery, the carrots, the garlic, the thyme, the nutmeg, the salt, and the pepper.

Step 2 –Pour the broth into the chicken mixture and cover the slow cooker. Cook the soup for about 3-4 hours on high heat or 6 hours on low heat.

Step 3 –Transfer the chicken breasts to a plate and shred them.

Step 4 –Add the shredded chicken and the gnocchi to the soup.

Step 5 –In a small bowl, whisk the heavy cream and the cornstarch together.

Step 6 –Pour the heavy cream mixture into the soup and stir well.

Step 7 –Set the slow cooker to high heat and cook the soup, about 20-30 minutes.

Step 8 –Stir the spinach into the soup until it wilts.

Step 9 –Serve the soup garnished with the parsley.
