And then you are like, “oh yes, those Jamberry Muffins are the bomb… how could I forget?!” A moist, delicious, cake-like layer is topped with a strawberry-infused filling and a sprinkling of sugar to create quite the memorable handful! Sweet, fresh strawberries are front and center in these delicious Jamberry Muffins, so you won’t ever forget them again. We think Sunday mornings (or any morning) deserve these special, never-to-be-forgotten muffins!
Ingredients
- 1 tablespoon lemon zest
- 2/3 cup granulated sugar
- 2 1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon kosher salt
- 1/2 cup unsalted butter, cut into 1/2-inch-wide cubes and room temperature
- 2 large eggs, beaten
- 2/3 cup whole milk
- 1 1/2 cups strawberries, hulled and chopped into 1/2-inch pieces
- 2 tablespoons sparkling sugar
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease a 12-cup muffin tin.
Step 3 -Over a large bowl, rub the lemon zest into the granulated sugar with your clean hands until they are evenly combined. This will infuse the sugar with the zest’s essential oils. Place the mixture in the bowl.
Step 4 -Whisk the flour, the baking powder, and the salt into the sugar-zest mixture.
Step 5 -Add the butter and use an electric mixer to mix until it is evenly combined and no large pieces of the butter remain.
Step 6 -Fold the eggs and the milk into the flour mixture with a spatula until they are just combined.
Step 7 -Add 1 heaping tablespoon of the muffin batter into each of the prepared muffin wells.
Step 8 -Fold the strawberries into the remaining muffin batter in the bowl.
Step 9 -Evenly divide the strawberry-filled muffin batter over the batter in each of the muffin wells.
Step 10 -Sprinkle the sparkling sugar evenly over the muffins.
Step 11 -Bake the muffins until they are firm to the touch and a toothpick inserted into the center comes out clean, about 20-25 minutes.
Step 12 -Transfer the muffin tin to a wire rack and let the muffins cool, about 5 minutes.
Step 13 -Serve.
