Slow ‘n’ Easy Phillys

When there’s a lot to do around the house, don’t skip out on the chance for a tasty dinner! Slow ‘n’ Easy Phillys lets you get your stuff done while also getting dinner made. The tender meat soaks in the slow cooker for a few hours in a tangy, onion-y broth to bring loads of flavor to the hoagies it gets served over. Mmm, mmm, mmm, you’re eatin’ good tonight! Slow ‘n’ Easy Phillys are sure of it! Take it easy!

Ingredients

  • 1 (2-pound) beef chuck roast or pot roast
  • salt, to taste
  • pepper, to taste
  • 1 tablespoon olive oil
  • 1 1/4 cups low-sodium beef broth
  • 2 onions, sliced
  • 1 (10.5-ounce) can French onion soup
  • 1 tablespoon soy sauce
  • 1 tablespoon garlic, minced
  • 2 yellow bell peppers, sliced
  • 8 hoagie rolls, split
  • 8 ounces provolone or American cheese, optional, sliced

Directions

Step 1 -Season the beef with the salt and the pepper.

Step 2 -In a skillet over medium-high heat, add the olive oil.

Step 3 -Add the seasoned beef to the heated oil and brown it on all sides.

Step 4 -Transfer the browned beef to a slow cooker.

Step 5 -Add the beef broth to the skillet and scrape the bottom to loosen any of the browned bits. Pour it over the beef in the slow cooker.

Step 6 -Add the onions, the French onion soup, the soy sauce, and the garlic to the slow cooker, cover, and cook on low heat, about 7 hours 15 minutes.

Step 7 -Add the bell peppers to the beef mixture and cook, about 45 minutes.

Step 8 -Transfer the beef to a cutting board and slice it thin.

Step 9 -Place the beef slices in the slow cooker and stir to combine with the juices.

Step 10 -Preheat the oven to 350 degrees F.

Step 11 -Open the hoagie rolls and top each with 1 of the cheese slices.

Step 12 -Transfer the hoagie rolls to a baking sheet and bake until the cheese has melted, about 5 minutes.

Step 13 -Fill the hoagie rolls evenly with the beef slices, the peppers, and the juices.

Step 14 -Serve.
