Ingredients
- 14 ounces pasta, preferably butternut squash pasta
- 8-9 ounces Brussels sprouts, stems discarded and sprouts chopped into thin pieces
- 1 Granny Smith apple, cored and chopped into small cubes
- 3 ounces dried cranberries
- 1/2 cup pecans, chopped and toasted
- 1/3 cup mayonnaise
- 2 tablespoons sour cream
- 2 tablespoons apple cider vinegar
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon dry mustard or mustard powder
Directions
Step 1 –Cook the pasta to al dente according to package directions.
Step 2 –Drain the pasta and allow it to cool.
Step 3 –In a large bowl, combine the cooked pasta, the Brussels sprouts, the apples, the dried cranberries, and the pecans.
Step 4 –In a small bowl, stir the mayo, the sour cream, the apple cider vinegar, the olive oil, the salt, the pepper, and the dry mustard.
Step 5 –Drizzle the dressing over the salad and toss until everything is coated and combined.
Step 6 –Serve.
