Spicy Thai Chicken Casserole

Don’t sleep on this authentically delicious, creamy Spicy Thai Chicken Casserole. Spicy chicken curled up with pillows of flavorful rice noodles will have you dreaming of another land far, far away. When you binge-eat this Spicy Thai Chicken Casserole, you will be counting your lucky sheep (instead of stars, haha). “Curry” up and get your spice on!

Ingredients

  • 1 (11.5-ounce) bottle Thai peanut sauce
  • 1 cup chicken broth
  • 3 cups rotisserie chicken, shredded
  • 3 cups coleslaw mix
  • 4 green onions, chopped
  • 1 (14-ounce) package thick rice noodles
  • peanuts, optional, to taste
  • fresh cilantro, optional, to taste, minced

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Grease a 9×13-inch baking dish.

Step 3 –In a bowl, whisk the peanut sauce and the broth together.

Step 4 –Add the chicken, the coleslaw mix, and the green onions to the peanut sauce and toss to combine.

Step 5 –In a large pot of salted, boiling water, cook the rice noodles to al dente according to the package directions.

Step 6 –Drain the water from the rice noodles and return the noodles to the pot.

Step 7 –Toss the rice noodles immediately with the chicken mixture.

Step 8 –Transfer the chicken mixture to the prepared baking dish.

Step 9 –Bake the casserole, covered with foil, until it is heated thoroughly, about 10-15 minutes.

Step 10 –Garnish the casserole with the peanuts and cilantro and serve.
