Ingredients

For the crust:

  • 1/4 cup sugar
  • 1/2 cup butter, room temperature
  • 1 1/2 cup flour
  • 1/4 teaspoon salt

For the filling:

  • 1/2 cup lemon juice
  • zest of 1 lemon
  • 8-10 strawberries
  • 1 1/2 cup sugar
  • 3 eggs
  • 1/4 cup plus 1 tablespoon flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • confectioner’s sugar, optional, for topping

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Beat together the 1/4 cup of the sugar and the butter until the mixture is light and creamy.

Step 3 –Little by little, add in the 1 1/2 cups of the flour and the 1/2 teaspoon of the salt until the mixture turns crumbly.

Step 4 –In a 9×13 inch pan, press the crust mixture down and along the sides.

Step 5 –Bake until lightly golden brown, about 17 minutes.

Step 6 –Add the lemon juice, lemon zest, strawberries, the remaining sugar, the eggs, the remaining flour, the baking powder, and the remaining salt to a blender and blend until smooth.

Step 7 –Pour the filling over the hot crust.

Step 8 –Bake until the middles of the bars are set, about 25 minutes.
