Sweet Potato Snacks

Sweet Potato Snacks really go all on in on the sweet aspect of these sunset-golden tubers! Each tender round is brushed with cinnamon-sugar and then topped with a tangy and floral goat cheese and honey whip! A sprinkling of candied pecans and sweetened cranberries brings the snackable vibes to new heights and adds dimension to the candy-like goodness on display! Sweet Potato Snacks are hearty treats with a dessert-like edge!

Ingredients

  • 1 tablespoon granulated sugar
  • 1/2 teaspoon cinnamon
  • 3-4 medium sweet potatoes, peeled, cut into 1/2-inch slices
  • olive oil, to taste
  • sea salt, to taste
  • 4 ounces goat cheese
  • 1 tablespoon cream or half-and-half
  • 1 tablespoon honey, plus more, to taste, for serving
  • 1/4 cup candied pecans, store-bought or homemade, chopped
  • 1/4 cup dried sweetened cranberries, chopped

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –In a small bowl, add the granulated sugar and the cinnamon and stir to combine.

Step 3 –Brush each side of the sweet potato slices with the olive oil.

Step 4 –Sprinkle both sides of the sweet potato slices with the salt and the cinnamon-sugar.

Step 5 –Place the sweet potato slices on a heavy cookie sheet.

Step 6 –Bake the sweet potatoes, turning them once halfway through, until tender and golden-brown, about 30 minutes.

Step 7 –In a bowl, add the goat cheese, the cream, and 1 tablespoon of the honey and, using an electric hand mixer, beat to combine.

Step 8 –Transfer the sweet potato slices from the oven and allow them to cool.

Step 9 –Add about 1 teaspoon of the goat cheese mixture on each of the sweet potato slices.

Step 10 –Sprinkle the slices with the pecans and the cranberries.

Step 11 –Serve drizzled with the extra honey.
