Sweet-Tart Salad

It’s not what you think! There are no crunchy, sweet, or sour candies atop this bed of lettuce! Nope. Sweet-Tart Salad wouldn’t do that to you! Instead, you get a big bowl of crunchy greens topped with sweet and tart-flavored things. Think: sugared pecans and apples for the sweet, and dried cranberries for the tart! The dressing drizzled on top brings the sweet and tart combo together to create the most satisfying salad you’ve ever tasted! You’ll never be more surprised than after a bite of Sweet-Tart Salad! Ingredients

For the salad:

  • 2 red apples, thinly sliced
  • 2 tablespoons fresh lemon juice
  • 4-5 cups spinach salad mix
  • 1/2 red onion, thinly sliced
  • 1/2 cup dried cranberries
  • 1/2 cup sugared pecans, chopped
  • 4 tablespoons goat cheese, crumbled

For the salad dressing:

  • 2 tablespoons apple cider vinegar
  • 1 1/2 tablespoons white sugar
  • 1 1/2 tablespoons Dijon mustard
  • 4 tablespoons olive oil
  • salt, to taste
  • pepper, to taste

Directions

Step 1 –Place the apple slices in a large salad bowl, drizzle with the lemon juice, and toss them to coat.

Step 2 –In a large salad bowl, add the spinach salad mix, the coated red apples, the red onion, the dried cranberries, the sugared pecans, and the goat cheese and toss to combine.

Step 3 –In a small jar, add the apple cider vinegar, the white sugar, the Dijon mustard, the olive oil, the salt, and the pepper, cover, and shake vigorously, until the salad dressing has thickened, about 20-30 seconds.

Step 4 –Pour the dressing over the salad greens and toss to coat.

Step 5 –Serve.
