Everyone has ideas of how to use up their leftover turkey from Thanksgiving, but what about that much beloved classic side dish, mashed potatoes? Well, no worries, because Thanksgiving Waffles have a very breakfast-y way of making sure no puff of whipped potato goodness goes to waste! Mixed with a little pancake mix and some melty cheese, your leftover mashed potatoes are transformed into golden-brown and fluffy waffles, just in time for brunch! As a bonus, you can use up some of your cranberry jelly by turning it into an improvised cranberry syrup for topping! Thanksgiving Waffles will have you being thankful for leftovers!

Ingredients
For the waffles:
- 2/3 cup pancake mix
- 1/4 cup leftover mashed potatoes
- 1 tablespoon cheese, of your choice, shredded
- 1/3 cup water
For the topping:
- 1/3 cup cranberry jelly
- 2 mandarin oranges, juiced
- 1 teaspoon sugar
- butter, optional, to taste, for serving

Directions
Step 1 –Preheat a Belgian waffle iron.
Step 2 –In a bowl, add the pancake mix, the mashed potatoes, the shredded cheese, and the water and stir to combine.
Step 3 –Carefully grease the hot Belgian waffle iron with cooking spray.
Step 4 –Pour 1/2 cup of the batter into the waffle iron and cook until golden-brown, following the waffle iron’s package directions.
Step 5 –Transfer the cooked waffle to a plate and keep it warm.
Step 6 –Repeat the cooking process using the remaining batter.
Step 7 –In a blender, add the cranberry jelly, the mandarin orange juice, and the sugar and blend until smooth.
Step 8 –Serve the waffles with the cranberry topping and the butter.
