For the lemon vinaigrette:

  • 1 lemon, juiced
  • 1 lime, juiced
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon honey
  • salt, to taste
  • pepper, to taste

For the salad:

  • 2 chicken breasts, cooked and shredded
  • 2 avocados, diced
  • 1 cup corn kernels
  • 6 slices bacon, cooked crisp and chopped
  • 4 cups lettuce, chopped
  • 2 Roma tomatoes, seeded and diced
  • 2 tablespoons fresh parsley, minced
  • 2 tablespoons fresh scallions, chopped

Step 1 –In a small bowl or in a mason jar, combine the lemon juice, the lime juice, the olive oil, the garlic, the honey, the salt, and the pepper.

Step 2 –Taste the dressing for seasoning and adjust with the salt and the pepper as needed.

Step 3 –In a large bowl, toss the chicken, the avocados, the corn kernels, the bacon, the lettuce, the tomatoes, the parsley, and the scallions together until evenly distributed.

Step 4 –Toss the salad with 1/2 of the dressing.

Step 5 –Add more of the dressing over top as desired.

Step 6 –Serve.
