Twisted BLT Salad

Oh yes, let’s put a twist on a popular sandwich by making it a salad. But that’s not the only twist in Twisted BLT Salad! The dressing, with its smokey, sweet barbeque sauce and bright lemon juice, also adds a twist of sour and tang to an otherwise straightforward arrangement of succulent bacon, savory chicken, and crisp salad greens! Oh, and don’t forget the tomatoes! Twisted BLT Salad certainly offers a twist on traditional green courses!

Ingredients

  • 1/2 cup mayonnaise
  • 4 tablespoons barbeque sauce
  • 2 tablespoons onion, finely chopped
  • 1 tablespoon lemon juice
  • 1/4 teaspoon pepper
  • 8 cups salad greens, torn
  • 2 large tomatoes, chopped
  • 1 1/2 pounds chicken breasts, boneless and skinless, cooked and cubed
  • 10 bacon strips, cooked and crumbled
  • 2 large eggs, hard-boiled and sliced

Directions

Step 1 –In a small bowl, combine the mayo, the barbeque sauce, the onion, the lemon juice, and the pepper together; refrigerate the dressing, covered, until ready to serve.

Step 2 –Place the salad greens in a large bowl and sprinkle them with the tomatoes, the chicken, and the bacon.

Step 3 –Garnish the salad mixture with the eggs and drizzle with the dressing.

Step 4 –Serve.
