Ultimate Mongolian Shrimp

Life is busy. You’ve run all over the place to check off your to-dos and now you’re starving. Instead of having pizza (again), make this Ultimate Mongolian Shrimp. It’s extremely quick and easy, and brings together sweet and spicy flavors that you’re sure to love! Plus, there are veggies mixed in with the pink, plump shrimp so it’s balanced and filling. Served over some steaming, hot rice, making (and eating) the Ultimate Mongolian Shrimp will be your favorite chore of the day!

Ingredients

For the Mongolian shrimp:

  • 1/2 cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 1/3 cup hoisin sauce
  • 1/4 cup brown sugar
  • 3 teaspoons garlic, minced
  • 2 teaspoons ginger, minced
  • 3/4 cup chicken broth
  • crushed red pepper flakes, to taste
  • 1/2 pound medium shrimp, peeled and deveined
  • kosher salt, to taste
  • black pepper, freshly ground
  • 3 tablespoons cornstarch
  • 2 tablespoons vegetable oil, divided
  • 1 large head broccoli, cut into florets
  • 1 green bell pepper, thinly sliced

Optional, for serving:

  • 3 green onions, thinly sliced
  • toasted sesame seeds, to taste
  • basmati rice, to taste, cooked and warm

Directions

Step 1 –In a small bowl, add the soy sauce, the sesame oil, the hoisin sauce, the brown sugar, the garlic, the ginger, the chicken broth, and the red pepper flakes, and mix to combine.

Step 2 –In a medium bowl, add the shrimp and season with the salt and the pepper.

Step 3 –Add the cornstarch to the shrimp and toss until they are well-coated.

Step 4 –In a large skillet over medium-high heat, add 1 tablespoon of the oil and the shrimp and cook until they reach an internal temperature of 145 degrees F, are golden-brown, and are slightly crispy, about 4 minutes per side.

Step 5 –Transfer the cooked shrimp to a plate.

Step 6 –In the same skillet, add the remaining oil, the broccoli, and the bell pepper and cook until the broccoli is tender, about 2 minutes.

Step 7 –Add the cooked shrimp and the sauce to the broccoli and simmer, stirring frequently, until the sauce has thickened, about 5 minutes.

Step 8 –Transfer the skillet from the heat and garnish with the green onions and the sesame seeds.

Step 9 –Serve the shrimp and the sauce over the rice.
