William Shatner’s Muffins

Let your taste buds go on this excitingly delicious, outer space journey as you bite into these golden-brown muffins that are blasting off with melty chocolate chips. Yum! Ingredients

  • 2 cups flour
  • 1/2 cup sugar
  • 2 1/2 teaspoons baking powder
  • 2 teaspoons instant espresso powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup milk
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla
  • 3/4 cup chocolate chips

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Grease the cups of a muffin tin.

Step 3 –Sift the flour, the sugar, the baking powder, the espresso powder, the cinnamon, and the salt into a large bowl.

Step 4 –Make a well in the center of the flour mixture.

Step 5 –In another bowl, add the egg, the milk, and the melted butter and beat with an electric hand mixer.

Step 6 –Add the vanilla to the egg mixture and stir to combine.

Step 7 –Add the egg mixture and the chocolate chips to the flour mixture and mix until just moistened.

Step 8 –Spoon the batter into the prepared muffin cups, filling each 2/3 full.

Step 9 –Bake the muffins until a toothpick inserted into the center comes out clean, about 20 minutes.

Step 10 –Serve.
