All the spicy, meaty flavors get mixed into some crumbly cornbread, and all you need is some cooling and refreshing guacamole to balance things out. Ingredients

  • 1 1/4 pounds ground beef or turkey
  • 1 (4-ounce) can diced green chiles
  • 1 (10-ounce) can tomatoes
  • 1/2 cup creamed corn
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 tablespoon dried cilantro, plus more, to taste
  • salt, to taste
  • pepper, to taste
  • 2 (6-ounce) packages Mexican-style cornbread mix, plus the ingredients called for on the package
  • 1 cup cheddar cheese, shredded
  • salsa, to taste, store-bought or homemade, for serving
  • guacamole, to taste, store-bought or homemade, for serving

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Coat a 13×9-inch pan with nonstick spray.

Step 3 –In a large skillet, add the beef and cook, while crumbling, until it is no longer pink. Drain the excess grease.

Step 4 –Stir the green chiles and their juices, the tomatoes and their juices, the creamed corn, the chili powder, the cumin, 1 tablespoon of the dried cilantro, the salt, and the pepper into the cooked beef and simmer until it has thickened and the flavors have combined.

Step 5 –Prepare the cornbread mixes according to the package directions.

Step 6 –Pour 1/2 of the prepared cornbread mix into the prepared pan and evenly top with the beef mixture.

Step 7 –Sprinkle the cheese in an even layer over the beef mixture and top with the remaining cornbread mix. Lightly sprinkle the extra dried cilantro over top.

Step 8 –Bake the tamale bake until the top is golden-brown, about 25 minutes.

Step 9 –Serve the tamale bake with the salsa and the guacamole.
