The tender potatoes are tossed in some tantalizing spices, baked, and then sprinkled with some rich parmesan cheese and flakey parsley. Ingredients

  • 6 large potatoes, peeled, cut into cubes
  • 4 tablespoons olive oil
  • salt, to taste
  • pepper, to taste
  • 5 cloves garlic, minced
  • 1/4 cup parmesan cheese, grated
  • 1/4 cup parsley, chopped

Directions

Step 1 –Preheat the oven to 425 degrees F.

Step 2 –Line a baking sheet with parchment paper.

Step 3 –Arrange the potatoes on the baking sheet.

Step 4 –In a small mixing bowl, combine the olive oil, the salt, the pepper, and the garlic.

Step 5 –Pour the olive oil mixture over the potatoes and toss until the potatoes are evenly coated.

Step 6 –Bake the potatoes for 30-35 minutes, turning on the broiler at the end to achieve a golden-brown crisp.

Step 7 –Combine the parmesan cheese and the parsley in a mixing bowl.

Step 8 –Pour the cheese mixture over the potatoes and toss until the cheese is slightly melted.

Step 9 –Serve.
