Ingredients

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1/2 cup milk, plus more, to taste
  • 1/2 cup half-and-half
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • 1 (4-ounce) can diced jalapeƱos
  • 2 cups Wisconsin cheddar cheese, shredded
  • 1 cup Wisconsin Colby cheese, shredded
  • kosher salt, to taste
  • freshly ground black pepper, to taste

Directions

Step 1 –In a saucepan over medium heat, melt the butter.

Step 2 –Whisk the flour into the butter until it has lightly browned, about 1 minute.

Step 3 –Gradually whisk the milk into the butter mixture and cook, whisking constantly, until it is incorporated, about 1-2 minutes.

Step 4 –Stir the half-and-half, the garlic powder, the onion powder, and the paprika into the butter mixture until it thickens slightly, about 1 minute.
