Ingredients

  • 10 large eggs
  • 1/2 teaspoon pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder, optional
  • 1/2 red bell pepper, diced
  • 3 tablespoons white onion, minced
  • 1 1/2 cups ham, diced, can substitute 8 slices bacon, cooked and crumbled, or 1/2 pound sausage, casings removed and cooked, diced
  • 1 cup cheddar cheese, shredded
  • 1/2 cup mozzarella cheese, shredded

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a muffin pan with cooking spray.

Step 3 –Whisk the eggs, the pepper, the salt, and the garlic powder in a medium bowl until combined.

Step 4 –Divide the red pepper, the onion, the ham, the cheddar cheese, and the mozzarella cheese evenly between each well of the muffin pan.

Step 5 –Evenly pour the egg mixture over the veggie-ham-cheese mixture inside each of the muffin wells.

Step 6 –Bake until set, about 22-25 minutes.

Step 7 –Serve the muffins warm.
