Ingredients

  • 3 1/3 cups potato dinner rolls, cubed, divided
  • 2/3 envelope ranch salad dressing mix
  • 6 cups mashed potatoes, cooked
  • milk, to taste
  • butter, to taste
  • 2 medium celery ribs, finely chopped
  • 1 cup baby portobello mushrooms, sliced
  • 5 strips bacon, cooked and crumbled
  • 1 1/3 cups Monterey Jack cheese, shredded
  • green onions, to taste, chopped

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 13×9-inch baking dish.

Step 3 –Place the dinner roll cubes onto an ungreased 15x10x1-inch baking pan and bake the rolls until they are toasted, about 7-10 minutes.

Step 4 –In a large bowl, combine the salad dressing mix, the mashed potatoes, the milk, and the butter.

Step 5 –Fold 2 cups of the toasted roll pieces, the celery, the mushrooms, and the bacon into the mashed potato mixture.

Step 6 –Transfer the mashed potato mixture to the prepared baking dish and top with the remaining toasted roll pieces.

Step 7 –Place the baking dish onto a baking sheet and bake, uncovered, for 35 minutes.

Step 8 –Sprinkle the top of the stuffing mixture with the cheese and bake until the cheese has melted and the tops of the roll pieces are golden-brown, about 5-10 minutes.

Step 9 –Sprinkle the green onions over the top of the stuffing.

Step 10 –Serve.
