Ingredients
- 1 cup salsa
- 1 cup canned diced tomatoes with green chilies, drained
- 1 (1-ounce) package taco seasoning
- 1/2 onion, diced
- 4 chicken breast halves, boneless and skinless
- tortillas, optional, to taste, of your choice, warmed, for serving
Directions
Step 1 -In a bowl, add the salsa, the tomatoes with green chilies, and the taco seasoning and stir to combine.
Step 2 -In a slow cooker, add the onions and the chicken.
Step 3 -Top the chicken-onion mixture with the salsa mixture.
Step 4 -Cover the slow cooker and cook until the chicken breasts are very tender and reach an internal temperature of 165 degrees F, about 7-8 hours on low or 3-4 hours on high.
Step 5 -Transfer the chicken breasts to a cutting board and, using two forks, shred it into bite-sized pieces.
Step 6 -Add the shredded chicken to the slow cooker and stir to combine.
Step 7 -Serve the chicken mixture with the warm tortillas.
