Apple-Of-My-Eye Oatmeal

This dish is guaranteed to find a place in your heart… and on your breakfast table! Apple-Of-My-Eye Oatmeal is tender and sweet, with lots of crisp, juicy apple flavor and warm spices mixed in! It’s comforting, filling, and just wonderful to warm you up when you’re facing a cold morning! Better yet, Apple-Of-My-Eye Oatmeal can be ready with you in the morning thanks to the slow cooker! Ingredients

For the oatmeal:

  • 6 cups water
  • 1 1/2 cups steel-cut oats
  • 3/4 cup unsweetened applesauce
  • 1/4 cup maple syrup
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/8 teaspoon salt
  • 1 large apple, of your choice, chopped

Optional toppings:

  • apple slices, to taste, of your choice
  • maple syrup, to taste
  • pecans, to taste, toasted
  • cinnamon sticks, to taste

Directions

Step 1 –In a 4-quart slow cooker, add the water, the oats, the applesauce, 1/4 cup of the maple syrup, the cinnamon, the nutmeg, and the salt and stir to combine.

Step 2 –Cover and cook on low until the liquid is absorbed, about 6-8 hours.

Step 3 –Stir in the chopped apples.

Step 4 –Top with the remaining sliced apples, the remaining syrup, and the pecans.

Step 5 –Serve garnished with the cinnamon sticks.
