Baked Pumpkin Oatmeal

Cozy on up to the table in your comfy robe and fluffy slippers as you dig into this rich, cinnamon-spiced, pumpkin-flavored take on your morning usual. Make sure you have your favorite steaming cup of coffee on hand as you scoop up some of this Baked Pumpkin Oatmeal! Your crisp and cool sunrise just got a little cozier!

Ingredients

  • 1 (15-ounce) can pumpkin purée
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 teaspoon cinnamon, plus more, to taste
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 1/4 teaspoon ginger
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla
  • 1 1/2 cups milk, plus more, to taste, for serving
  • 2 1/2 cups old-fashioned oats
  • maple syrup, to taste, for serving

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Coat an 8×8-inch baking dish with baking spray.

Step 3 –In a large bowl, whisk the pumpkin purée, the brown sugar, the eggs, 1 teaspoon of the cinnamon, the nutmeg, the cloves, the ginger, the salt, the baking powder, and the vanilla together.

Step 4 –Whisk 1 1/2 cups of the milk into the pumpkin mixture.

Step 5 –Stir the oats into the pumpkin mixture.

Step 6 –Pour the oatmeal mixture into the prepared pan and lightly sprinkle with the extra cinnamon.

Step 7 –Bake the oatmeal mixture until the center is set and the edges are lightly browned, about 45 minutes.

Step 8 –Serve the oatmeal with the maple syrup and the extra milk.
