Ingredients

  • 1 pound ground beef
  • 1 (16-ounce) can kidney beans, rinsed and drained
  • 1 (15.25-ounce) can whole kernel corn, drained
  • 1 (10.75-ounce) can condensed tomato soup, undiluted
  • 1/4 cup milk, 2%
  • 2 tablespoons onion, finely chopped
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1 cup Velveeta, cubed
  • 1 (12-ounce) tube refrigerated biscuits
  • 2-3 tablespoons butter, melted
  • 1/3 cup yellow cornmeal

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Grease a 2 1/2-quart baking dish.

Step 3 –In a saucepan over medium heat, cook the beef, while crumbling, until no longer pink, about 5-7 minutes.

Step 4 –Drain the fat from the saucepan.

Step 5 –Add the beans, the corn, the soup, the milk, the onion, the chili powder, and the salt.

Step 6 –Bring the mixture to a boil.

Step 7 –Remove the saucepan from the heat.

Step 8 –Stir in the cheese until melted.

Step 9 –Spoon the mixture into the prepared baking dish.

Step 10 –Bake, uncovered, for 10 minutes.

Step 11 –Brush all sides of the biscuits with the butter.
