Ingredients
- 3 cups old fashioned oats
- 1 cup raw almonds
- 1/3 cup coconut, shredded
- 3/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon kosher salt
- 1/3 cup creamy almond butter
- 1/3 cup honey
- 6 tablespoons unsalted butter
- 1 teaspoon vanilla extract
Directions
Step 1 –Preheat the oven to 300 degrees F.
Step 2 –Line a baking sheet with parchment paper.
Step 3 –In a large bowl, combine the oats, the almonds, the coconut, the cinnamon, the nutmeg, and the salt.
Step 4 –In a medium saucepan over low heat, combine the almond butter, the honey, and the butter until it is smooth, about 3 minutes.
Step 5 –Transfer the butter mixture from the heat and stir in the vanilla.
Step 6 –Pour the butter mixture over the oat mixture and stir with a rubber spatula until the oat mixture is moist.
Step 7 –Evenly spread the granola mixture onto the prepared baking sheet and bake, stirring halfway through, until it is golden-brown, about 35 minutes.
Step 8 –Let the granola cool completely without stirring it, about 45 minutes.
Step 9 –Serve or store in an airtight container for up to 2 weeks.
