Ingredients
- 5 tablespoons fresh lemon juice
- 7 tablespoons extra-virgin olive oil, divided
- 2 tablespoons butter, melted
- 1/3 cup all-purpose flour
- 1 teaspoon ground coriander
- 3/4 teaspoon sweet Spanish paprika
- 3/4 teaspoon ground cumin
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1 1/2 pounds cod fillets
- 5 cloves garlic, minced
- 1/4 cup fresh parsley leaves, chopped
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -In a shallow bowl, mix the lemon juice, 5 tablespoons of the olive oil, and the butter together.
Step 3 -In another shallow bowl, mix the flour, the coriander, the paprika, the cumin, the salt and the pepper together.
Step 4 -Pat the cod fillets dry.
Step 5 -Dip each of the cod fillets into the lemon sauce and then into the flour mixture. Shake off the excess flour. Reserve the remaining sauce.
Step 6 -In a cast-iron skillet over medium-high heat, heat the remaining olive oil.
Step 7 -Add the coated fillets to the oil and sear on each side until there is color, but they are not fully cooked.
Step 8 -Add the minced garlic to the remaining sauce and mix.
Step 9 -Drizzle the lemon sauce over the cod fillets.
Step 10 -Bake the cod fillets until they flake easily with a fork and the internal temperature reads 145 degrees F, about 10 minutes.
Step 11 -Sprinkle the fillets with the parsley and serve.
