Ingredients
- 2 pounds baby carrots
- 1/2 cup unsalted butter
- 1/4 cup honey
- 1/4 cup brandy
- 1/4 teaspoon salt or to taste
- 1/4 teaspoon pepper or to taste
- 1 tablespoon parsley fresh, optional, chopped, for garnish
Directions
Step 1 –Using a large skillet, bring about 1/2 inch of water to a boil on the stove-top.
Step 2 –Mix in the carrots, then cover and cook the carrots until they are crispy-tender, around 7-9 minutes.
Step 3 –Drain the carrots and set it aside.
Step 4 –Using the same skillet, cook the butter and honey over a medium heat until the butter is melted.
Step 5 –Mix in the brandy and bring the mixture to a boil.
Step 6 –Cook the glaze until it has reduced to about 1/2 cup.
Step 7 –Add the carrots back in and stir or toss to coat.
Step 8 –Season with salt and pepper to taste, garnish with parsley, and serve!
