Ingredients

  • 1 1/2 pounds carrots, sliced 1/4-inch-thick on the diagonal
  • 2 tablespoons butter, melted
  • 2 tablespoons pure maple syrup
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 2 teaspoons fresh chives, snipped

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –In a large bowl, combine the carrots, the butter, the maple syrup, the salt, and the pepper and stir to combine.

Step 3 –Spread the carrot mixture evenly onto a large rimmed baking sheet.

Step 4 –Roast the carrot mixture, stirring once, until tender, about 20-25 minutes.

Step 5 –Sprinkle the chives over the carrots

Step 6 –Serve.
