Brazilian Pork Loin

You’ll feel like a brand-new person after slicing into this juicy slab of meat that’s coated in a sweet-and-herby escape. It takes some time to bake in the oven, but use that time to crack a cold one (whatever drink you desire) and unwind. Brazilian Pork Loin brings an unexpected getaway with all sorts of rewards!

Ingredients

  • 1 cup orange juice
  • 1/2 cup light brown sugar
  • 1 tablespoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1 (4-5-pound) pork loin
  • 2 teaspoons salt
  • freshly ground black pepper, to taste
  • orange slices, to taste, for garnish
  • parsley leaves, to taste, for garnish

Directions

Step 1 –In a small saucepan over medium heat, add the orange juice, the brown sugar, the ginger, and the cloves and stir to combine.

Step 2 –Bring the sauce to a simmer and cook, about 30 minutes.

Step 3 –Preheat the oven to 325 degrees F.

Step 4 –Place the pork, fat-side up, in a roasting pan and evenly rub it with the salt and the pepper.

Step 5 –Pour the sauce over the seasoned pork.

Step 6 –Cook the pork, basting occasionally, until it reaches an internal temperature of 170 degrees F, about 3 hours.

Step 7 –Transfer the roasting pan to a wire rack and cover with foil. Let the pork rest, about 5 minutes.

Step 8 –Slice the pork, garnish with the orange slices and the parsley, and serve.
