Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 medium overripe bananas, mashed with a fork
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup canola oil or a similar neutral-flavored oil
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Spray a 9×5-inch loaf pan with cooking spray.

Step 3 –In a medium bowl, whisk together the flour, the baking powder, the baking soda, and the salt.

Step 4 –In a separate large bowl, whisk together the mashed bananas and the eggs.

Step 5 –Add the buttermilk, the oil, the sugar, and the vanilla to the banana mixture and mix well.

Step 6 –Stir the dry ingredients into the wet ingredients until just combined. Do not overmix.

Step 7 –Pour the batter into the prepared baking pan.

Step 8 –Bake until a toothpick inserted into the center comes out with only moist crumbs clinging to it, about 1 hour-1 hour 10 minutes.

Step 9 –Let the bread cool in the pan for 10 minutes.

Step 10 –Transfer the bread from the pan to a cooling rack to completely cool.

Step 11 –Slice and serve.
