Ingredients
- 1 1/2 cups self-rising cornmeal
- 1 1/2 cups self-rising flour
- 1 1/2 tablespoons sugar
- 1 teaspoon salt
- 2 1/2 teaspoons baking powder
- 2 eggs
- 2 3/4 cups buttermilk
- 1 onion, finely chopped
- 1/2 cup butter, melted
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Grease a cast-iron skillet.
Step 3 –In a bowl, mix the cornmeal, the flour, the sugar, the salt, and the baking powder together.
Step 4 –Stir the eggs into the cornmeal mixture and mix until combined.
Step 5 –Slowly stir the buttermilk into the cornmeal mixture.
Step 6 –Mix the onions into the cornmeal batter.
Step 7 –Pour the cornbread batter into the skillet and bake until the top is lightly browned and the cornbread is set in the middle, about 1 hour.
