Ingredients

  • 1 pound ground hot pork sausage
  • 2 (15-ounce) cans black-eyed peas, drained and rinsed
  • 1 (10-ounce) can diced tomatoes with green chilies, drained
  • 1 (8-ounce) package cream cheese, softened
  • 1 cup sour cream
  • 2 cups cheddar cheese, shredded
  • crackers, optional, to taste, for serving

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Coat a 12-inch cast-iron skillet or 9×13-inch baking dish with nonstick cooking spray.

Step 3 –In a separate large skillet over medium-high heat, add the sausage and cook, while crumbling, until it is no longer pink, about 5-7 minutes.

Step 4 –Drain the excess grease from the skillet.

Step 5 –In a large bowl, add the cooked sausage, the black-eyed peas, the diced tomatoes with green chilies, the cream cheese, the sour cream, and the cheddar cheese and stir to combine.

Step 6 –Evenly spread the mixture in the bottom of the prepared cast-iron or baking dish.

Step 7 –Bake until bubbly, about 30 minutes.

Step 8 –Serve with the crackers.
