Cheesy Monterey Chicken

The tender chicken is smothered in tangy BBQ sauce, melty cheese, crispy bacon, and topped with tomatoes and fresh green onions for a refreshing addition to a hearty entree! Best of all, this recipe only takes 30 minutes to make! Before you know it, this delicious Cheesy Monterey Chicken will be ready to be served with whatever side your heart desires.

Ingredients

  • 1 tablespoon olive oil
  • 4 chicken breasts, boneless and skinless
  • salt, to taste
  • pepper, to taste
  • 1 cup barbecue sauce
  • 1 cup shredded cheese blend
  • 4 slices bacon, cooked and crumbled
  • 1/2 cup tomatoes, diced
  • 1/4 cup green onions, chopped

Directions

Step 1 –Heat up the olive oil in a large oven-safe pan over medium-high heat.

Step 2 –Set your oven to 400 degrees F.

Step 3 –Season the chicken breast on both sides with salt and pepper to your liking. Cook the chicken for about 4 to 5 minutes on each side, or until it is done. The cook time may vary depending on the thickness of your chicken breast.

Step 4 –Pour the barbecue sauce over the chicken.

Step 5 –Then, sprinkle 1/4 cup of cheese over each chicken breast.

Step 6 –Place your pan in the oven for another 3-5 minutes, or until the cheese is melted.

Step 7 –Sprinkle on the bacon, tomatoes, and green onions over the chicken as your toppings.

Step 8 –Serve while hot.
