Ingredients

  • 1 1/4 cups water
  • 3/4 cup white rice, uncooked
  • 1 1/2 cups milk
  • 1/3 cup white sugar
  • 1 teaspoon vanilla extract
  • 1/3 cup raisins
  • 1 tablespoon butter
  • 2 tablespoons unsweetened cocoa, plus more, to taste, for serving
  • whipped cream, to taste, for serving

Directions

Step 1 –In a medium saucepan over medium-high heat, bring the water to a boil.

Step 2 –Stir the rice into the water, reduce the heat, cover, and let it simmer, about 20 minutes. Transfer the rice from the heat.

Step 3 –In the top of a double boiler over simmering water on medium heat, combine 1 1/2 cups of the cooked rice, the milk, the white sugar, the vanilla extract, the raisins, the butter, and 2 tablespoons of the unsweetened cocoa.

Step 4 –Cook the rice mixture, stirring occasionally, until it thickens, about 20-30 minutes.

Step 5 –Serve with the whipped cream and the extra cocoa powder.
